The old press room

Before it was a hotel, this was where the estate pressed its own oil. Cut back into the tufa, the room held its temperature through the Basilicata summers, and it still does — Il Frantoio stays several degrees below the rest of the house even in August without the air conditioning running.

The one window is cut deep through the rock, its ledge wide enough to set a lamp on and its weathered shutter left open through the day. The stonework is original; everything else, from the linen to the espresso machine, is new.
